Pumpkin Spice everything season is just around the corner. Here's one that combines fall and carnival food into one.

Ingredients

  • 1 c
    plus 3 tablespoons all purpose flour
  • 1 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1/2 c
    strong coffee
  • 1/2 c
    half and half
  • 1
    egg
  • 1/4 c
    canned pumpkin pie mix
  • 1 tsp
    pure vanilla
  • 1 tsp
    orange zest
  • ·
    vegetable oil for frying
  • CREAM CHEESE DRIZZLE

  • 4 oz
    cream cheese, softened
  • 2 c
    powdered sugar
  • 1 Tbsp
    butter, softened
  • 1 tsp
    vanilla
  • 2 Tbsp
    half and half, add up to 2 tablespoons additional
  • 1 c
    chopped candied pecans

How to Make Pumpkin Spice Latte Funnel Cake

Step-by-Step

  1. In medium bowl, combine flour, baking powder, and salt. Stir in coffee, half & half, egg, pumpkin pie mix, vanilla and orange zest until just combined.
  2. Pour about 1" oil in large skillet. Heat to 375 degrees.
    Pour about 1/3 cup batter thru funnel. Swirling in a circular motion. Fry about 1 1/2 - 2 minutes. Turn. Fry about 1 - 1 1/2 minutes or until golden. Remove. Place on paper toweling. Keep warm.
  3. In small bowl, combine cream cheese, powdered sugar, butter, and 2 tablespoons half & half. Stir well. Add additional cream to thin if necessary. Drizzle a generous tablespoon over funnel cake. Top each with a generous tablespoon candied pecans. Serve immediately.
