So moist and tender with fantastic flavor. This recipe makes one bread or three mini loaves. I made three small individuals to wrap and give as gifts. I just love the taste of this bread...top with sugar and nuts as I did...or use your favorite glaze. Or nothing at all... Enjoy! My photos

Ingredients

  • 1 2/3 cups all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon plus 2 teaspoons ground cinnamon
  • 1 1/2 teaspoons nutmeg, freshly grated
  • 1/4 teaspoon ground cloves
  • 1 cup plus 2 tablespoons - solid packed pumpkin
  • 1 cup vegetable oil & yes, its 1 cup..lol
  • 1 1/3 cups sugar
  • 3/4 teaspoon salt
  • 3 large eggs

How To Make ~ pumpkin bread streusel ~ so good

  • Step 1
    Preheat oven to 325 degree F. Grease the bottom and sides of a 9×5-inch loaf pan.
  • Step 2
    You can use a mixer for this recipe, but I mix it by hand. That helps not to over mix. Mix the flour, baking powder, baking soda, cinnamon, nutmeg, and cloves into a mixing bowl.
  • Step 3
    In a large mixing bowl, beat the pumpkin, oil, sugar, and salt together until well blended.
  • Step 4
    Beat the eggs in one at a time, making sure each egg is completely incorporated before adding the next one. Scrape the sides of the bowl as necessary.
  • Step 5
    Add the flour and mix until just combined. You don’t want to over beat the batter as it will result in a tougher crumb. Then beat for 5 to 10 seconds until smooth.
  • Step 6
    Pour the batter into the loaf pan and tap the pan on the counter to help flatten the batter out.
  • Step 7
    I sprinkled with sugar/cinnamon and pecans. If using sugar and nut topping : I used about 3 tablespoons of sugar..1/4 tsp cinnamon - 1/2 cup pecans, chopped.
  • Step 8
    Bake for 1 hour or until toothpick comes out clean. Remove from oven to cooling rack. Let set for 20 minutes.
  • Step 9
    Flip bread out onto cooking rack, turn the cake back right side up and cool completely. Enjoy!
