Makes between 36 - 40 muffina
Ingredients
- 3 cups sugar
- 1 cup oil
- 4 - eggs
- 2 cups pumpkin
- 2/3 cup cold water
- 1 1/2 teaspoons salt
- 1 tablespoon pumpkin pie spice
- 1 teaspoon vinegar
- 3 1/2 cups flour
- 2 teaspoons baking soda
- 1 cup chopped pecans
- 1 package cinnamon chips
How To Make pumpkin cinnamon chip muffins

Step 1Cream sugar and oil, add eggs and pumpkin, beat well. Add salt, pumpkin spice and vinegar, continue beating.

Step 2Mix baking soda and water. Alternate adding flour and soda water mixture to the pumpkin batter mixing well.

Step 3Stir in nuts and chips just until blended. Fill prepared muffin tins 3/4 full. Bake at 350 degrees, 25 minutes or until a toothpick inserted in the center comes out clean.
