pumpkin cheese bread

This is similar to my banana bread recipe as it is from my FAVORITE cookbook! I usually make the small loaves because I can either freeze them or share them at work. This is a very moist bread and always gets raves. Hope you enjoy it as much as I do!

yield 8 slices/per loaf- 2 loaves

Ingredients

  • 2 1/2 cups sugar
  • 8 ounces softened cream cheese
  • 1/2 cup margarine
  • 4 - eggs
  • 15 ounces canned pumpkin
  • 3 1/2 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 1/4 teaspoons pumpkin spice
  • 1 cup nuts(opt)

How To Make pumpkin cheese bread

  • Step 1
    Combine sugar, softened cream cheese , and margarine, mixing til blended.
  • Step 2
    Add eggs, one at a time, mixing well after each addition.
  • Step 3
    Blend in pumpkin
  • Step 4
    Add combined dry ingredients, mixing till moist.
  • Step 5
    Fold in nuts.
  • Step 6
    Pour into 2 -9x5 loaf pans OR 6 small greased loaf pans.
  • Step 7
    Bake at 350 for 50 min (large loaves) or 40 min for small loaves. Test with toothpick.
  • Step 8
    Let cool about 10 min.
