Ingredients

3 c
flour
1 Tbsp
pumpkin pie spice plus
2 tsp
pumpkin pie spice
2 tsp
baking soda
1 1/2 tsp
salt
3 c
sugar
1 can(s)
(15 oz.) pumpkin
4
large eggs
1 c
oil
1/2 c
water
1 c
grated carrot
1 c
raisins or craisins or nuts

Step-By-Step

1Combine flour, pumpkin pie spice, baking soda and salt in large bowl.
2Combine sugar, pumpkin, eggs, oil and water in large miximg bowl; beat just until blended.
3Add pumpkin mixture to flour mixture; stir just until moistened.
4Fold in carrot and raisins or nuts.
5Spoon batter into 2 greased and floured 9 X 5 inch loaf pans.
6Bake at 350 degrees for 60-65 minutes. Cool.
