pumpkin bread w/streusel topping

This recipe always makes a moist bread...I wanted to incorporate a cream cheese filling but didnt have it on hand..but I will include it in the recipe =)

Ingredients

  • 1 1/4 cups all purpose flour
  • 1/4 cup brown sugar, firmly packed
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon pumpkin pie spices
  • 2 - eggs
  • 1/2 cup vegetable oil
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 cup pumpkin, canned or cooked

How To Make pumpkin bread w/streusel topping

  • Step 1
    Pre-heat oven 350*. Lightly butter 9x5 in. loaf pan
  • Step 2
    Mix flour, sugars, baking powder & soda, salt, cinnamon, nutmeg, pumpkin pie spice in a large bowl...whisk eggs, oil, sour cream, vanilla, & pumpkin in seperate bowl...add to dry ingredients and fold until combined
  • Step 3
    Spread batter in pan and top w/streusel topping...1 pkg.instant maple & brown sugar oatmeal,2 tbls. brown sugar,2 tbls. butter,1 tbls.flour..mix until resembles crumble...spread on top of batter and bake..55 min. or until toothpick comes out clean
  • Step 4
    If adding the cream cheese filling...whip 1 package of 8oz. cream cheese & 1/2 cup b.sugar and layer between the batter..then proceed with streusel topping...ENJOY!!! =)
