A fall favorite, but good at any time of the year!

Ingredients

  • 2 1/2 cups sugar
  • 1 - 15 oz. cans pumpkin
  • 4 - eggs, beaten
  • 1 cup canola oil **
  • 2/3 cup water
  • 2 teaspoons vanilla
  • 3 1/2 cups flour
  • 1/2 teaspoon baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt (optional)
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • 1/4 teaspoon ginger
  • ** - can use 1/2 cup applesauce and 1/2 cup canola oil to reduce the fat content

How To Make pumpkin bread

  • Step 1
    In a large mixing bowl, stir together the sugar, pumpkin, eggs, oil, water and vanilla.
  • Step 2
    Sift the remaining dry ingredients into the pumpkin mixture. Stir until just blended.
  • Step 3
    Grease and flour three 8x4 inch loaf pans. Pour batter into prepared pans and bake at 350° for 50 to 60 minutes or until toothpick inserted in center comes out clean.
  • Step 4
    Cool on rack for 10 minutes before removing from pans.
