Ingredients
- CRUMB TOPPING
- 1/2 cup butter or margarine
- 1 cup flour
- 1/4 cup sugar
- 1 tablespoon lemon peel, grated
- COFFEECAKE
- 8 - medium sized plums, or 20 small plums
- 1 cup butter, softened
- 1 cup sugar
- 1 1/4 cups flour
- 2 teaspoons baking powder
- 2 teaspoons lemon peel, grated
- 1/4 teaspoon salt
- 4 - eggs
- - heavy cream
How To Make plum coffeecake

Step 1Prepare Crumb Topping and set aside. Crumb Topping: In a small saucepan, melt butter. Remove from heat and add 1 c. flour, 1/4 c. sugar, and 1 Tb. grated lemon peel to form a soft dough. Can use 2/3 c. flour and 3 Tb. oats instead.

Step 2Slice plums if large or halve them if small; set aside.

Step 3Preheat oven to 325. Grease and flour 13x9 pan.

Step 4In large bowl, beat butter and sugar. Add flour, baking powder, salt, lemon peel, and eggs. Beat until smooth. Spread batter evenly in pan; top with plumbs. Pinch small pieces of crumb topping and sprinkle on top of plums.

Step 5Bake 50 to 60 minutes or until top is golden and cake tests done. Serve warm with cream.
