Ingredients

  • CRUMB TOPPING
  • 1/2 cup butter or margarine
  • 1 cup flour
  • 1/4 cup sugar
  • 1 tablespoon lemon peel, grated
  • COFFEECAKE
  • 8 - medium sized plums, or 20 small plums
  • 1 cup butter, softened
  • 1 cup sugar
  • 1 1/4 cups flour
  • 2 teaspoons baking powder
  • 2 teaspoons lemon peel, grated
  • 1/4 teaspoon salt
  • 4 - eggs
  • - heavy cream

How To Make plum coffeecake

  • Step 1
    Prepare Crumb Topping and set aside. Crumb Topping: In a small saucepan, melt butter. Remove from heat and add 1 c. flour, 1/4 c. sugar, and 1 Tb. grated lemon peel to form a soft dough. Can use 2/3 c. flour and 3 Tb. oats instead.
  • Step 2
    Slice plums if large or halve them if small; set aside.
  • Step 3
    Preheat oven to 325. Grease and flour 13x9 pan.
  • Step 4
    In large bowl, beat butter and sugar. Add flour, baking powder, salt, lemon peel, and eggs. Beat until smooth. Spread batter evenly in pan; top with plumbs. Pinch small pieces of crumb topping and sprinkle on top of plums.
  • Step 5
    Bake 50 to 60 minutes or until top is golden and cake tests done. Serve warm with cream.
