My entire family likes how moist this bread is.

Ingredients

  • 3 - eggs
  • 2 cups white granulated sugar
  • 3/4 teaspoon nutmeg
  • 1 cup dates (optional) i don't use them
  • 3 cups white sifted flour
  • 1 1/2 teaspoons cinnamon
  • 2 cups zucchini - (remove seeds and blend until smooth)
  • 1 cup cooking oil
  • 2 teaspoons vanilla
  • 1/2 teaspoon baking powder
  • 1 cup pecans, chopped
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup pineapple - (8 1/4 oz. crushed and drained)

How To Make pineapple zucchini bread

  • Step 1
    Beat eggs, oil, sugar and vanilla until thick
  • Step 2
    Stir in remaining ingredients and mix well
  • Step 3
    Pour mixture into 2 greased and floured 9" X 5" loaf pans
  • Step 4
    Bake at 350 degrees for 1 hour or until wooden inserted toothpick comes out clean.
