white granulated sugar
3/4 tsp
1 c
dates (optional) i don't use them
3 c
white sifted flour
1 1/2 tsp
2 c
zucchini - (remove seeds and blend until smooth)
1 c
cooking oil
2 tsp
1/2 tsp
baking powder
1 c
pecans, chopped
2 tsp
baking soda
1 tsp
1 c
pineapple - (8 1/4 oz. crushed and drained)

How to Make Pineapple Zucchini Bread


  • 1Beat eggs, oil, sugar and vanilla until thick
  • 2Stir in remaining ingredients and mix well
  • 3Pour mixture into 2 greased and floured 9" X 5" loaf pans
  • 4Bake at 350 degrees for 1 hour or until wooden inserted toothpick comes out clean.
