Ingredients
- 3 - eggs
- 2 cups white granulated sugar
- 3/4 teaspoon nutmeg
- 1 cup dates (optional) i don't use them
- 3 cups white sifted flour
- 1 1/2 teaspoons cinnamon
- 2 cups zucchini - (remove seeds and blend until smooth)
- 1 cup cooking oil
- 2 teaspoons vanilla
- 1/2 teaspoon baking powder
- 1 cup pecans, chopped
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 cup pineapple - (8 1/4 oz. crushed and drained)

Step 1Beat eggs, oil, sugar and vanilla until thick

Step 2Stir in remaining ingredients and mix well

Step 3Pour mixture into 2 greased and floured 9" X 5" loaf pans

Step 4Bake at 350 degrees for 1 hour or until wooden inserted toothpick comes out clean.
