When I found this recipe I thought I would just try it and very glad I did. I will never make regular zucchini bread again! This is so good!!

all purpose flour
2 c
2 c
grated zucchini
eggs, slightly beaten
1 c
vegetable oil
1 tsp
baking powder
1 tsp
baking soda
2 tsp
vanilla extract
3 tsp
cinnamon, ground
1 c
chopped walnuts
1/2 c
crushed pineapple--drained
1/2 c
shredded coconut
1/2 c

How to Make Pineapple Zucchini Bread


  • 1grease and flour 2 loaf pans or 3 smaller foil pans. In large bowl mix oil,sugar and the eggs until smooth.Fold in the zucchini. In a separate bowl mix the flour,baking soda,baking powder,salt and cinnamon. Fold this mixture into the wet mixture and add the vanilla, crushed pineapple,coconut,raisins and chopped walnuts.
  • 2Spoon the mixture into 2 loaf pans that are greased and floured. Bake at 325 degrees for 50-60 mins or until toothpick comes out clean. ENJOY!!
