When I found this recipe I thought I would just try it and very glad I did. I will never make regular zucchini bread again! This is so good!!

Ingredients

  • 3 cups all purpose flour
  • 2 cups sugar
  • 2 cups grated zucchini
  • 3 - eggs, slightly beaten
  • 1 cup vegetable oil
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons vanilla extract
  • 3 teaspoons cinnamon, ground
  • 1 cup chopped walnuts
  • 1/2 cup crushed pineapple--drained
  • 1/2 cup shredded coconut
  • 1/2 cup raisins

How To Make pineapple zucchini bread

  • Step 1
    grease and flour 2 loaf pans or 3 smaller foil pans. In large bowl mix oil,sugar and the eggs until smooth.Fold in the zucchini. In a separate bowl mix the flour,baking soda,baking powder,salt and cinnamon. Fold this mixture into the wet mixture and add the vanilla, crushed pineapple,coconut,raisins and chopped walnuts.
  • Step 2
    Spoon the mixture into 2 loaf pans that are greased and floured. Bake at 325 degrees for 50-60 mins or until toothpick comes out clean. ENJOY!!
