I am posting this recipe for the Hawaii region of the world tour event. This is based on a recipe from "Best of the Best Hawaii Cookbook", that I changed for our tastes.

Ingredients

  • 2 c
    flour
  • 1 Tbsp
    baking powder
  • 1/2 tsp
    salt
  • 1/2te tsp
    cinnamon
  • 1/4 tsp
    nutmeg
  • 1/2 c
    vegetable oil
  • 1/2 c
    sugar
  • 1/4 c
    brown sugar, lightly packed
  • 2
    eggs
  • 2/3 c
    milk
  • 1 tsp
    vanilla extract
  • 8 oz
    can of crushed pineapple, drained
  • 1/2 c
    chopped pecans

How to Make Pineapple Nut Bread

Step-by-Step

  1. Preheat oven to 350 degrees. Lightly oil and flour one loaf pan.
  2. Sift flour, baking powder, salt, cinnamon and nutmeg onto wax paper. In a large bowl, beat oil with sugars; add eggs, one at a time; mix well.
  3. Add dry ingredients alternately with the milk. Stir in vanilla; add pineapple and pecans. Bake for 50 minutes. Cool completely before cutting.
