pineapple nut bread

I am posting this recipe for the Hawaii region of the world tour event. This is based on a recipe from "Best of the Best Hawaii Cookbook", that I changed for our tastes.

Ingredients

  • 2 cups flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2te teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup vegetable oil
  • 1/2 cup sugar
  • 1/4 cup brown sugar, lightly packed
  • 2 - eggs
  • 2/3 cup milk
  • 1 teaspoon vanilla extract
  • 8 ounces can of crushed pineapple, drained
  • 1/2 cup chopped pecans

How To Make pineapple nut bread

  • Step 1
    Preheat oven to 350 degrees. Lightly oil and flour one loaf pan.
  • Step 2
    Sift flour, baking powder, salt, cinnamon and nutmeg onto wax paper. In a large bowl, beat oil with sugars; add eggs, one at a time; mix well.
  • Step 3
    Add dry ingredients alternately with the milk. Stir in vanilla; add pineapple and pecans. Bake for 50 minutes. Cool completely before cutting.
