pineapple nut bread
I am posting this recipe for the Hawaii region of the world tour event. This is based on a recipe from "Best of the Best Hawaii Cookbook", that I changed for our tastes.

Ingredients
- 2 cups flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2te teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup vegetable oil
- 1/2 cup sugar
- 1/4 cup brown sugar, lightly packed
- 2 - eggs
- 2/3 cup milk
- 1 teaspoon vanilla extract
- 8 ounces can of crushed pineapple, drained
- 1/2 cup chopped pecans
How To Make pineapple nut bread

Step 1Preheat oven to 350 degrees. Lightly oil and flour one loaf pan.

Step 2Sift flour, baking powder, salt, cinnamon and nutmeg onto wax paper. In a large bowl, beat oil with sugars; add eggs, one at a time; mix well.

Step 3Add dry ingredients alternately with the milk. Stir in vanilla; add pineapple and pecans. Bake for 50 minutes. Cool completely before cutting.
