We can definitely see enjoying this pineapple nut bread for breakfast. It reminds us of raisin bread or bagel. This quick bread is made with staple pantry ingredients which means you can prepare it anytime you want a treat. We loved the burst of sweet and tangy pineapple in each bite. Sprinkling a cinnamon sugar mixture on top forms a sweet crust and adds the perfect crunch.

Ingredients
- 1 3/4 cups sifted all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon soda
- 1/2 cup raisins
- 3/4 cup chopped walnuts
- 3/4 cup sugar
- 3 tablespoons butter
- 2 - eggs
- 1 can crushed pineapple, not drained (8 oz)
How To Make pineapple nut bread

Step 1Put raisins in bowl. Cover with boiling water to plump.

Step 2Drain water and throw away the water.

Step 3Cream butter and sugar.

Step 4Add eggs and beat well.

Step 5Blend in pineapple.

Step 6Sift in dry ingredients and mix well.

Step 7Add raisins and nuts.

Step 8Mix together.

Step 9Place batter in a greased bread pan.

Step 10Prepare the topping. Mix together 2 Tbsp sugar and 1/2 tsp cinnamon.

Step 11Sprinkle topping over the batter.

Step 12Bake 350 degrees 60 to 70 minutes until a toothpick comes out clean.
