This is a recipe from my grandfather. He died before I was born, so I never got to ask him why they were called Phoebe's donuts. Phoebe, by the way was NOT my grandmother's name.

Ingredients

2 large
potatoes, mashed well
1 c
sugar
1
egg, beaten
8 Tbsp
milk
1 1/2 tsp
melted butter
4 tsp
baking powder
2 1/2 c
flour
1 tsp
vanilla extract

How to Make Phoebe's Donuts

Step-by-Step

  • 1Sift flour and baking powder together in bowl.
  • 2Mix together the remaing ingredients in another bowl. To this mixture add the flour mixture. It should be a stiff batter and you should be able to make a roll with it. If not, add additional flour.
  • 3Once you have shaped your roll, cut it into 24 slices and deep fry them in fat. Back in the day when my grandfather made these, I am sure they probably used lard. I think shortening or vegetable oil will work fine.
  • 4Place them on a towel to dry. While still hot, sprinkle with sugar if desired.
