phoebe's donuts
(1 RATING)
This is a recipe from my grandfather. He died before I was born, so I never got to ask him why they were called Phoebe's donuts. Phoebe, by the way was NOT my grandmother's name.

Ingredients
- 2 large potatoes, mashed well
- 1 cup sugar
- 1 - egg, beaten
- 8 tablespoons milk
- 1 1/2 teaspoons melted butter
- 4 teaspoons baking powder
- 2 1/2 cups flour
- 1 teaspoon vanilla extract
How To Make phoebe's donuts
-
Step 1Sift flour and baking powder together in bowl.
-
Step 2Mix together the remaing ingredients in another bowl. To this mixture add the flour mixture. It should be a stiff batter and you should be able to make a roll with it. If not, add additional flour.
-
Step 3Once you have shaped your roll, cut it into 24 slices and deep fry them in fat. Back in the day when my grandfather made these, I am sure they probably used lard. I think shortening or vegetable oil will work fine.
-
Step 4Place them on a towel to dry. While still hot, sprinkle with sugar if desired.
