I can not tell you how much we LOVE banana bread. What goes better with bananas? Peanut Butter....Yummy!!!!!

Ingredients

  • 1 1/2 c
    mashed ripe bananas
  • 1/3 c
    plain fat free yogurt
  • 1/3 c
    chunky peanut butter
  • 3 Tbsp
    butter, melted
  • 2 large
    eggs
  • 1/2 c
    sugar
  • 1/2 c
    brown sugar
  • 1 1/4 c
    flour
  • 1/4 c
    ground flaxseed
  • 3/4 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1/2 tsp
    ground cinnamon
  • 1/8 tsp
    allspice, ground
  • ·
    cooking spray
  • GLAZE

  • 1/3 c
    powedered sugar
  • 1 Tbsp
    skim milk
  • 1 Tbsp
    chunky peanut butter

How to Make Peanut Butter Banana Bread

Step-by-Step

  1. Preheat oven to 350 degrees. Mix bananas, yogurt, peanut butter, butter, and eggs in a large bowl. Gradually add sugar and brown sugar, untill all is blended.
  2. Mix the flour, flaxseed, baking soda, salt, cinnamon, and allspice in a small bowl. Add flour mixture to banana mixture.
  3. Pour batter into a 9 x 5-inch loaf pan coated with cooking spray. Bake at 350° for 1 hour and 5 minutes or until a wooden pick inserted in center comes out clean. Remove from oven; cool 10 minutes in pan on a wire rack. Remove bread from pan; cool.
  4. For glaze, combine powdered sugar, milk and peanut butter. Drizzle over bread.
