1preheat a griddle or skillet for the pancakes on med-high. Make the pancake mix according to directions. I usually use buttermilk pancake mix.
2Use 3/4 laddle to pour the mix on the griddle. Cook first side until the bubbles formed stay as small holes. Then take the spatula and flip to the other side. Cook about 2 minutes until lightly browned. Cook each pancake this way until the batter is gone. Cool pancakes completely. about 1 - 2 hours.
3Take one pancake and spread peanut butter on it. Take another pancake and spread preserves on it. Put them together with the peanut butter and preserves facing each other. Put in a sandwich bag or serve immediately.
