1/2 tsp
salt
1/2 tsp
baking soda
2 tsp
baking powder
2/3 c
nonfat dry milk powder
1/3 c
oatmeal, uncooked
1/2 c
brown sugar
1/2 c
chopped peanuts
1/4 c
chopped walnuts
1/2 c
raisins
1/3 c
prunes, pitted, chopped
3
eggs
1/2 c
oil
1/2 c
molasses
3/4 c
orange juice
1 c
mashed bananas

How to Make Nutritious Breakfast Bread

Step-by-Step

  • 1Preheat oven to 325.
  • 2Combine flour, salt, baking powder, baking soda, milk, oats, sugar, nuts, raisins and prunes in large bowl.
  • 3Blend with fork.
  • 4Beat eggs until foamy.
  • 5Add oil, molasses, juice and bananas.
  • 6Add mix to dry ingredients.
  • 7Pour into 2 8x4 greased loaf pans.
  • 8Bake at 325 for one hour (for muffins, grease tins and fill 2/3 full, bake 350 for 20 minutes).
  • 9Cool slightly before removing from pan.
  • 10You may substitute raw chopped apples, grated carrots, applesauce or grated zucchini for bananas.
