My mother got this recipe off of her disc of 1,000,000 Recipes and she and I are both Diabetics and have been for years. I hope you enjoy this recipe My youngest daughter loves it and she is not diabetic.

Ingredients

  • 1/2 c
    shortening
  • 1 c
    splenda
  • 2
    eggs
  • 1 c
    buttermilk
  • 2 tsp
    baking soda
  • 2 1/4 c
    flour all purpose
  • 1 tsp
    baking powder
  • 1/2 tsp
    salt
  • 2 c
    mashed bananas

How to Make No Sugar Added Banana Bread

Step-by-Step

  1. Cream shortening and splenda and add eggs one at a time. Stir in Baking Soda into buttermilk and add to mixture. Add Bananas to flour, salt and baking powder. Mix well and add in nuts Optional. Pour into 2 greased loaf pans and bake at 375 for 1 hour.
