my mom's banana bread

This recipe has been in my family for as long as I can remember. My mother, who is watching me from heaven, made this frequently when I was growing up. It is simple and very moist.

Ingredients

  • 2 or 3 - bananas, the riper the better
  • 1 cup sugar
  • 3 tablespoons margarine, melted
  • 1 - egg, lightly beaten
  • 1 cup sour milk (add 1 tbsp lemon juice to 1 cup milk)
  • 1 teaspoon baking soda
  • 2 1/2 cups all purpose flour
  • 1 teaspoon vanilla

How To Make my mom's banana bread

  • Step 1
    Preheat oven to 400 degrees. Spray 2 loaf pans with cooking spray.
  • Step 2
    Mash bananas well (I use my potato masher)add sugar and mix well. Add remaining ingredients and mix to combine well.
  • Step 3
    Divide mixture evenly between loaf pans. Bake for 1 hour until done when tested with toothpick.
