This recipe has been in my family for as long as I can remember. My mother, who is watching me from heaven, made this frequently when I was growing up. It is simple and very moist.

Ingredients
- 2 or 3 - bananas, the riper the better
- 1 cup sugar
- 3 tablespoons margarine, melted
- 1 - egg, lightly beaten
- 1 cup sour milk (add 1 tbsp lemon juice to 1 cup milk)
- 1 teaspoon baking soda
- 2 1/2 cups all purpose flour
- 1 teaspoon vanilla

Step 1Preheat oven to 400 degrees. Spray 2 loaf pans with cooking spray.

Step 2Mash bananas well (I use my potato masher)add sugar and mix well. Add remaining ingredients and mix to combine well.

Step 3Divide mixture evenly between loaf pans. Bake for 1 hour until done when tested with toothpick.
