This bread was a family favorite that Mom used to make. It is very good served warm.

Ingredients

  • 3 cups all purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 1/2 teaspoons cinnamon, ground
  • 2 cups sugar
  • 2 teaspoons vanilla extract
  • 3 - eggs
  • 2 cups coarsley shredded zuchinni
  • 3/4 cup finely chopped pecans or walnuts
  • 1 can (8 0z) crushed pineapple, drained
  • 1 cup canola oil

How To Make mom's zuchinni bread

  • Step 1
    Combine flour, baking soda, salt, baking powder, cinnamon and nuts. Set aside.
  • Step 2
    Beat eggs slightly in large bowl then add: sugar, oil and vanilla. Beat until creamy. Stir in zucchini and pineapple.
  • Step 3
    Add dry ingredients stirring only until moistened.
  • Step 4
    Spoon batter into two well greased and floured loaf pans.
  • Step 5
    Bake at 350 degrees for 1 hour or until done. Cool 10 minutes in pan.
