Ingredients

  • 3 c
    all purpose flour
  • 2 tsp
    baking soda
  • 1/2 tsp
    baking powder
  • 1 tsp
    salt
  • 1 1/2 tsp
    cinnamon, ground
  • 2 c
    sugar
  • 2 tsp
    vanilla extract
  • 3
    eggs
  • 2 c
    coarsley shredded zuchinni
  • 3/4 c
    finely chopped pecans or walnuts
  • 1 can(s)
    (8 0z) crushed pineapple, drained
  • 1 c
    canola oil

How to Make Mom's Zuchinni Bread

Step-by-Step

  1. Combine flour, baking soda, salt, baking powder, cinnamon and nuts. Set aside.
  2. Beat eggs slightly in large bowl then add: sugar, oil and vanilla. Beat until creamy. Stir in zucchini and pineapple.
  3. Add dry ingredients stirring only until moistened.
  4. Spoon batter into two well greased and floured loaf pans.
  5. Bake at 350 degrees for 1 hour or until done. Cool 10 minutes in pan.
