Ingredients
- 3 cups all purpose flour
- 2 teaspoons baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1 1/2 teaspoons cinnamon, ground
- 2 cups sugar
- 2 teaspoons vanilla extract
- 3 - eggs
- 2 cups coarsley shredded zuchinni
- 3/4 cup finely chopped pecans or walnuts
- 1 can (8 0z) crushed pineapple, drained
- 1 cup canola oil
How To Make mom's zuchinni bread

Step 1Combine flour, baking soda, salt, baking powder, cinnamon and nuts. Set aside.

Step 2Beat eggs slightly in large bowl then add: sugar, oil and vanilla. Beat until creamy. Stir in zucchini and pineapple.

Step 3Add dry ingredients stirring only until moistened.

Step 4Spoon batter into two well greased and floured loaf pans.

Step 5Bake at 350 degrees for 1 hour or until done. Cool 10 minutes in pan.
