My mom only made these once a year;I make them twice a year, freeze them to enjoy whenever I want a loaf of sweet bread. You'll need 6 1 pound coffe cans.

Ingredients

  • 1 - can bakers joy
  • 6 teaspoons cooking oil
  • 6 - eggs
  • 1 1/2 cups oil
  • 1/2 cup water
  • 2 - small cans of pumpkin
  • 4 1/2 cups sugar
  • 5 cups flour
  • 3 teaspoons baking soda
  • 2 teaspoons salt
  • 2 teaspoons cinnamon
  • 2 1/4 cups dates
  • 2 1/4 cups chopped nuts

How To Make mom's coffe canned pumpkin bread

  • Step 1
    Preheat oven 350. Spray coffe cans with bakers joy and put 1 tsp. of oil in bottom of can(s). Mix: eggs, cups of oil,water, pumpkin, sugar.
  • Step 2
    Then mix in: flour, soda, salt, and cinnamon. Then add and mix dates and nuts. Fill the cans 1/2 way, until all of batter is used. Bake for 1 hour and 5 minutes.
  • Step 3
    Let cans cool for 1 hour. Remove from cans and let them cool competely.
