These are a touch sweet with a flaky inside and crisp outside. So delish.

Ingredients

  • 3/4 cup milk
  • 1 1/2 teaspoons active dry yeast
  • 1/4 cup granulated sugar + 1 Tbsp
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 4 large eggs, divided
  • 1/2 cup butter

How To Make milk brioche dinner rolls

  • Step 1
    Heat the milk to 105 degrees. Add the yeast and 1 Tbsp sugar. Give it a quick whisk. Let it sit for 10 minutes until it is frothy to make sure it's active. Place a hook attachment in a stand mixer.
  • Step 2
    Place the flour in the mixer. Add the salt, yeast mixture, and sugar. Start the mixture on low and add 3 of the eggs one at a time. Move the mixer to high and mix for about 5 minutes.
  • Step 3
    Add the butter one tablespoon at a time. Continue mixing the dough for about 10 more minutes. Until the dough no longer sticks to the bowl. It should be smooth and elastic.
  • Step 4
    Place the dough in an oiled bowl and cover with a kitchen towel and let sit in a warm place for 1 hour.
  • Step 5
    It should double in size. Push it down.
  • Step 6
    Then roll into 12 balls and place on a sheet cover again and let sit another hour.
  • Step 7
    Generously grease a baking sheet. Mix the last egg with a little water, whisking until it's well incorporated.
  • Step 8
    Lay the balls on the baking sheet and brush with the egg wash. Place a pinch of flaky salt on the top of each roll.
  • Step 9
    Bake for 25 minutes. Until golden. Enjoy warm with melted butter and honey.
