1 c
sugar
1/2 lb
butter, softened

eggs
6 c
flour
2 tsp
salt
1 tsp
baking soda
6 tsp
baking powder
2 1/2 c
buttermilk
1 c
raisins

How to Make Mike's Irish Soda Bread

Step-by-Step

  • 1Cream the butter and sugar well until light and fluffy, about 5 minutes. Add eggs 1 at a time, waiting between until each is incorporated.
  • 2Sift all the dry ingredients together in a separate bowl. Add the flour mixture and buttermilk alternating beginning and ending with the buttermilk on slow speed of mixer. Add raisins and mix in well.
  • 3Spoon into two greased large loaf pans or three medium sized pans. Bake at 325 degrees. For two large pans bake for 1 1/2 hours. For three medium pans, bake for an hour and check for doneness.

    Cool on a wire rack.
