Makes 2 large loaves
Ingredients
- 1/2 pound unsalted butter, softened (2 sticks) or 1 c vegetable oil
- 2 cups sugar
- 4 large eggs
- 6 medium very ripe bananas, peel and mash
- 2 1/2 cups unbleached all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1/2 cup chopped macadamia nuts
How To Make maui banana bread

Step 1Oven to 350 degrees. Grease two 9" loaf pans. Combine butter and sugar, beat with electric mixer until creamy and pale yellow. Beat in eggs, one at a time, then add bananas. Sift together flour, soda and salt. Add to banana mixture and stir just until incorporated. Mix in nuts. Divide batter between two prepared pans and bake 50-60 minutes or toothpick test. Let each loaf cool in pan 10 minutes then remove to wire rack to cool completely.
