This is a Thanksgiving tradition at our house, but just as good for a Sunday Brunch, or a mid-week special treat. Very moist and full of delicious flavor!!

The original recipe called for water but I substituted crushed pineapple as that really enhances the flavor.

  • 1 1/2 c
  • 1 1/2 c
  • 1/4 tsp
    baking powder
  • 1 tsp
    baking soda
  • 3/4 tsp
  • 1/4 tsp
  • 1/2 tsp
  • 1/3 c
  • 2
  • 1 c
  • 1/3 c
    pineapple, crushed
  • 1/2 c
    nuts, chopped (optional) i don't use them but if i did, i would use pecans

How to Make Mama Robin's Pumpkin Bread


  1. Preheat oven to 350.
    Grease & flour a loaf pan.
  2. Sift sugar, flour, baking powder, baking soda, salt, ginger & cinnamon together and set aside.
  3. Cream together butter and eggs. Stir in pumpkin and pineapple.
  4. Add dry ingredients and mix well. (you can add 1/2 c. chopped nuts here if desired)

    Bake @ 350 for 1 hour. Cool 10 min. and remove from pan. You can serve this slightly warm or store and serve the next day.
