mama robin's pumpkin bread

This is a Thanksgiving tradition at our house, but just as good for a Sunday Brunch, or a mid-week special treat. Very moist and full of delicious flavor!! The original recipe called for water but I substituted crushed pineapple as that really enhances the flavor.

Ingredients

  • 1 1/2 cups sugar
  • 1 1/2 cups flour
  • 1/4 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/4 teaspoon ginger
  • 1/2 teaspoon cinnamon
  • 1/3 cup butter
  • 2 - eggs
  • 1 cup pumpkin
  • 1/3 cup pineapple, crushed
  • 1/2 cup nuts, chopped (optional) i don't use them but if i did, i would use pecans

How To Make mama robin's pumpkin bread

  • Step 1
    Preheat oven to 350. Grease & flour a loaf pan.
  • Step 2
    Sift sugar, flour, baking powder, baking soda, salt, ginger & cinnamon together and set aside.
  • Step 3
    Cream together butter and eggs. Stir in pumpkin and pineapple.
  • Step 4
    Add dry ingredients and mix well. (you can add 1/2 c. chopped nuts here if desired) Bake @ 350 for 1 hour. Cool 10 min. and remove from pan. You can serve this slightly warm or store and serve the next day.
