This was my grandmother's favorite recipes. My grandfather would raise the zucchini for her in his garden. She would grate it by hand and I always loved to help her as a kid growing up. I make about 40 loaves at Christmas time and give as gifts, everyone loves it!

Ingredients For mam maw's zucchini bread

  • 1 c
    oil
  • 2 c
    sugar
  • 3
    eggs
  • 3 c
    flour
  • 1 tsp
    soda
  • 1 tsp
    salt
  • 1 tsp
    cinnamon
  • 2 c
    grated zucchini
  • 1/2 c
    english walnuts
  • 1 tsp
    vanilla
  • 1/2 c
    coconut
  • 1 small can
    drained pineapple
  • FOR THE GLAZE
  • 1/2 stick
    butter
  • 1/8 c
    can milk
  • 1/2 c
    brown sugar
  • 1 Tbsp
    powdered sugar

How To Make mam maw's zucchini bread

    Heat your oven to 350 degrees. Beat oil, sugar, and eggs together set aside. Mix dry ingredients together, mixing well. Add your oil, sugar and egg mixture to your dry ingredients.

    Pour your mixture into well greased and floured loaf pans. Bake at 350 degrees for an hour or until you can insert a toothpick into your bread and it comes out clean.

    While your bread is baking mixed up your glaze in a small saucepan bring this mixture to a full boil.Pour it over your hot bread and let it soak in.
