Ingredients
- 3 - eggs
- 1/2 cup nuts
- 2 cups grated zucchini
- 2 teaspoons vanilla
- 3 cups flour, sifted
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1 teaspoon salt
- 3 teaspoons cinnamon
- 1 cup oil
- 2 cups sugar
How To Make madeleine's zucchini bread

Step 1Beat eggs until light and creamy. Add oil, sugar, zucchini and vanilla and mix lightly but well. In a separate bowl, mix the flour, soda, powder, salt and cinnamon. Add dry ingredients to liquid mixture with the nuts and blend well. Pour into 2 well greased and floured 9x5x3 loaf pans. Bake at 325 degrees for 1 hour. Remove loaves from pan and transfer to wire racks to cool.
