I love anything my mom made, and this is one that is a definite keeper!

Ingredients

  • 3 - eggs
  • 1/2 cup nuts
  • 2 cups grated zucchini
  • 2 teaspoons vanilla
  • 3 cups flour, sifted
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 teaspoon salt
  • 3 teaspoons cinnamon
  • 1 cup oil
  • 2 cups sugar

How To Make madeleine's zucchini bread

  • Step 1
    Beat eggs until light and creamy. Add oil, sugar, zucchini and vanilla and mix lightly but well. In a separate bowl, mix the flour, soda, powder, salt and cinnamon. Add dry ingredients to liquid mixture with the nuts and blend well. Pour into 2 well greased and floured 9x5x3 loaf pans. Bake at 325 degrees for 1 hour. Remove loaves from pan and transfer to wire racks to cool.
