    grated zucchini
  • 2 tsp
  • 3 c
    flour, sifted
  • 1 tsp
    baking soda
  • 1/4 tsp
    baking powder
  • 1 tsp
  • 3 tsp
  • 1 c
  • 2 c

How to Make Madeleine's Zucchini Bread


  1. Beat eggs until light and creamy. Add oil, sugar, zucchini and vanilla and mix lightly but well. In a separate bowl, mix the flour, soda, powder, salt and cinnamon. Add dry ingredients to liquid mixture with the nuts and blend well. Pour into 2 well greased and floured 9x5x3 loaf pans. Bake at 325 degrees for 1 hour. Remove loaves from pan and transfer to wire racks to cool.
