lemon poppyseed bread
This is my signature bread and I have been making it for 20 years and never posted the recipe. It is an extremely moist bread and always requested by family and friends for any occasion. Hope you enjoy it as much as we do. It also freezes well.

Ingredients
- 1 box lemon cake mix (do not use cake mix with pudding in it)
- 1 box lemon instant pudding (small)
- 4 - eggs
- 1/2 cup oil
- 1 cup water (i use 1/2 water and 1/2 lemon juice)
- 1/8 cup poppyseeds
How To Make lemon poppyseed bread

Step 1Stir ingredients well; do not use mixer. Pour into two greased loaf pans. Bake 40 - 45 minutes or until toothpick inserted in center comes out clean Since you add pudding to this cake mix, buy a mix without pudding in it.

Step 2Glaze: powdered sugar and lemon juice. Just add lemon juice until glaze consistency. Pour over loaves and cool in pans for 10 minutes. Invert. Wrap well in plastic wrap.
