How to Make Lemon Poppy Seed Bread
1Heat oven to 350 F.
Coat an 8 1/2 in x 4 1/2 in. loaf pan with cooking spray.
2In a medium bowl, whisk together the flour,baking powder and salt.
In a large bowl, whisk together the eggs, yogurt, sugar, oil,vanilla, lemon zest and the poppy seeds.
3Gradually add the flour mixture into the egg mixture, stirring until just incorporated.
4transfer the batter to the prepared pan and bake until golden brown and a wooden pick inserted comes out clean, 55 to 65 minutes.
5While the bread bakes, in a small bowl, combine 3/4 cup confectioners' sugar and 2 Tbsp fresh lemon juice.
While the bread is still warm on the cooling rack, spoon the glaze over the top. Enjoy!
