Ingredients

1 3/4 c
all purpose flour
1 1/4 tsp
baking powder
1/2 tsp
kosher salt
2 large
eggs
1 c
lemon yogurt
3/4 c
sugar
1/2 c
canola oil
2 tsp
grated lemon zest
1 Tbsp
poppy seeds
1 tsp
vanilla

LEMON GLAZE

3/4 c
confectioners' sugar
2 Tbsp
fresh lemon juice

How to Make Lemon Poppy Seed Bread

Step-by-Step

  • 1Heat oven to 350 F.

    Coat an 8 1/2 in x 4 1/2 in. loaf pan with cooking spray.
  • 2In a medium bowl, whisk together the flour,baking powder and salt.

    In a large bowl, whisk together the eggs, yogurt, sugar, oil,vanilla, lemon zest and the poppy seeds.
  • 3Gradually add the flour mixture into the egg mixture, stirring until just incorporated.
  • 4transfer the batter to the prepared pan and bake until golden brown and a wooden pick inserted comes out clean, 55 to 65 minutes.
  • 5While the bread bakes, in a small bowl, combine 3/4 cup confectioners' sugar and 2 Tbsp fresh lemon juice.

    While the bread is still warm on the cooling rack, spoon the glaze over the top. Enjoy!
