1preheat oven to 350. coat a 9x5 inch loaf pan with cooking spray.
2in a large bowl, combine flour, baking powder and salt. stir in sugar and coconut.
3in a medium bowl, whisk together eggs, milk, lemon juice and lemon zest. pour egg mixture into dry ingredients and stir just until combined. add in butter and stir until smooth. pour into prepared pan.
4bake 55-65 minutes or until a toothpick inserted in the center comes out clean. let cool 10 minutes, then turn out onto a wire rack to cool completely.
