Ingredients
- 2 1/2 cups all purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup sugar
- 1 cup coconut, shredded
- 2 - eggs
- 3/4 cup milk
- 1/2 cup lemon juice
- 1 tablespoon lemon zest, grated
- 1/2 stick butter, melted
How To Make lemon coconut bread

Step 1preheat oven to 350. coat a 9x5 inch loaf pan with cooking spray.

Step 2in a large bowl, combine flour, baking powder and salt. stir in sugar and coconut.

Step 3in a medium bowl, whisk together eggs, milk, lemon juice and lemon zest. pour egg mixture into dry ingredients and stir just until combined. add in butter and stir until smooth. pour into prepared pan.

Step 4bake 55-65 minutes or until a toothpick inserted in the center comes out clean. let cool 10 minutes, then turn out onto a wire rack to cool completely.
