I like to bake all different kinds of dessert breads and really don't have a favorite. If I had to choose a favorite, this would be at the top of the list. The aroma of this baking is heavenly and it is wonderful with a cup of coffee or a glass of cold milk.

Ingredients

  • 1 3/4 cups all purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup canola oil
  • 3/4 cup granulated sugar
  • 3 tablespoons fresh lemon juice
  • 8 ounces candied lemon peel (lightly coat w/flour)
  • 2 large eggs
  • 1/2 cup evaporated milk
  • 1 tablespoon fresh lemon juice (for the glaze)
  • 1 tablespoon granulated sugar (for the glaze)

How To Make lemon bread

  • Step 1
    Preheat oven to 350 degrees
  • Step 2
    Grease 8" or 9" loaf pan
  • Step 3
    Combine flour,baking powder and salt into medium bowl.
  • Step 4
    Beat sugar, oil and lemon juice in small mixing bowl.
  • Step 5
    Add eggs, one at a time beating well after each one into the sugar mixture.
  • Step 6
    Stir in the flour mixture alternately with evaporated milk until blended.
  • Step 7
    Stir in the lemon peel
  • Step 8
    Pour into prepared pan and bake for 35 to 40 minutes or until a wooden pick inserted in center comes out clean.
  • Step 9
    PREPARE GLAZE:
  • Step 10
    Combine lemon juice and sugar in small sauce pan
  • Step 11
    Bring to a boil and cook for 1 minuite.
  • Step 12
    Cool bread in pan for 5 minutes, remove from pan and brush with glaze. Serve warm or cooled.
