lemon bread
I like to bake all different kinds of dessert breads and really don't have a favorite. If I had to choose a favorite, this would be at the top of the list. The aroma of this baking is heavenly and it is wonderful with a cup of coffee or a glass of cold milk.

Ingredients
- 1 3/4 cups all purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 cup canola oil
- 3/4 cup granulated sugar
- 3 tablespoons fresh lemon juice
- 8 ounces candied lemon peel (lightly coat w/flour)
- 2 large eggs
- 1/2 cup evaporated milk
- 1 tablespoon fresh lemon juice (for the glaze)
- 1 tablespoon granulated sugar (for the glaze)
How To Make lemon bread

Step 1Preheat oven to 350 degrees

Step 2Grease 8" or 9" loaf pan

Step 3Combine flour,baking powder and salt into medium bowl.

Step 4Beat sugar, oil and lemon juice in small mixing bowl.

Step 5Add eggs, one at a time beating well after each one into the sugar mixture.

Step 6Stir in the flour mixture alternately with evaporated milk until blended.

Step 7Stir in the lemon peel

Step 8Pour into prepared pan and bake for 35 to 40 minutes or until a wooden pick inserted in center comes out clean.

Step 9PREPARE GLAZE:

Step 10Combine lemon juice and sugar in small sauce pan

Step 11Bring to a boil and cook for 1 minuite.

Step 12Cool bread in pan for 5 minutes, remove from pan and brush with glaze. Serve warm or cooled.
