Lemon Bread

This bread is moist and full of lemon flavor. From the good folks at Costco.

1 1/2 cups flour
1/2 tsp. salt
6 tbsp. butter, softened
1 cup sugar
2 eggs
1/2 cup milk
grated peel and juice of 1 lemon
1/4 cup poppy seeds or chopped walnuts
1/2 cup powdered sugar

How to Make Lemon Bread


  • 1Preheat oven to 350. Grease and flour a 9 x 5 inch loaf pan. Whisk together flour, salt and baking powder
  • 2In large bowl, cream butter, sugar and eggs together til light and fluffy. add milk, alternately with flour mixture in 2 parts; mix well. Stir in grated lemon peel and poppy seeds.
  • 3Pour batter into prepared loaf pan. Bake for 60 minutes or til toothpick inserted in center comes out clean. Let bread cool in pan for 5 minutes.
  • 4Mix together lemon juice and powdered sugar to make glaze. Remove bread from pan. Pour glaze over warm bread, poking holes in bread first till make it absorb more of the glaze. Makes 10 servings.
