karla's banana bread
This is a really good banana bread that I have been making for over 35 yrs. It has such good flavor and is so moist. I enjoy this hot or cold topped with butter. Sometimes I will double the batch and toss a couple of them in the freezer.

- 5-6 large ripe bananas
- 4 large eggs ; well beaten
- 1 cup shortening
- 2 cups sugar
- 3 1/2 cups flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 cup chopped walnuts ; optional
How To Make karla's banana bread

Step 1Let your banana's ripen until the skins are black , this will give you a really good banana flavor.

Step 2Grease 2 loaf pans or spray with non-stick baking spray and set aside.

Step 3Beat your peeled bananas until all creamy.

Step 4Whip the eggs with a fork and add the whipped eggs to the bananas.

Step 5Mix well and set aside.

Step 6In a separate bowl beat the shortening until it's creamy.

Step 7Gradually add the sugar and Beat until fluffy.

Step 8Add the banana mixture.

Step 9Mix until the banana mixture is combined.

Step 10In a 4 cup measuring cup or a separate bowl, Combine the flour , soda and the salt together and mix with a fork so all the soda and salt are mixed in with the flour.

Step 11Gradually add the flour mixture to the banana mixture , mixing up well before adding more flour.

Step 12Mix until it's all combined together ; add your walnuts if using.

Step 13Pour the batter evenly into the prepared bread pans.

Step 14Bake @ 300° for 1 1/4 to 1 1/2 hours until firm to the touch or until a cake tester or a tooth pick put inserted in the center comes out clean. Let them sit in the pans for 3-5 minutes before removing.

Step 15Place on a wire rack and let cool...enjoy
