Ingredients For johnnycake bahamian-style

1/2 cbutter, at room temperature + extra for greasing the pan

3/4 cgranulated sugar

4 cflour (i usually use pastry flour for unleavened bread)

1/2 cwater
-
1/2 Tbspsalt
-
2 Tbspbaking powder
-
3/4 cmilk or coconut milk
How To Make johnnycake bahamian-style

1Preheat oven to 325 degrees. Heat a cast iron skillet in the oven while it preheats and you prep the johnnycake.

2*Use an electric mixer and beat the butter and sugar together until creamy and light yellow. *It is helpful to use a stand up mixer to prepare this recipe if you have one.

3Add the flour, water, salt and baking powder *just* until combined.

4Pour in the milk slowly until the batter is sticky. DO NOT over-mix the batter!

5Carefully grease the cast iron skillet with butter and pour in the batter. Flatten the top.

6Bake 1 HOUR or until the edges of the johnnycake are browned. Note: the johnnycake will not rise very much.
