Ingredients
- 1/2 cup butter, at room temperature + extra for greasing the pan
- 3/4 cup granulated sugar
- 4 cups flour (i usually use pastry flour for unleavened bread)
- 1/2 cup water
- 1/2 tablespoon salt
- 2 tablespoons baking powder
- 3/4 cup milk or coconut milk
How To Make johnnycake bahamian-style

Step 1Preheat oven to 325 degrees. Heat a cast iron skillet in the oven while it preheats and you prep the johnnycake.

Step 2*Use an electric mixer and beat the butter and sugar together until creamy and light yellow. *It is helpful to use a stand up mixer to prepare this recipe if you have one.

Step 3Add the flour, water, salt and baking powder *just* until combined.

Step 4Pour in the milk slowly until the batter is sticky. DO NOT over-mix the batter!

Step 5Carefully grease the cast iron skillet with butter and pour in the batter. Flatten the top.

Step 6Bake 1 HOUR or until the edges of the johnnycake are browned. Note: the johnnycake will not rise very much.
