This is my grandmother's recipe. Even my husband, who can't stand vegetables adores this bread. It's extremely moist and tastes wonderful grilled on a griddle.

Ingredients

3
eggs
1 c
oil
2 c
sugar
1 Tbsp
vanilla extract
1 tsp
salt
3 c
flour
1 tsp
baking soda
2 tsp
cinnamon
1 1/2 c
raisins
3 c
raw shredded zucchini

How to Make Janet's Zucchini Bread

Step-by-Step

  • 1Mix all ingredients together with the exception of the Zucchini. Add zucchini once everything else is incorporated completely otherwise it will release too much juice.
  • 2Pour batter into two greased loaf pans.
  • 3Bake at 350 for one hour.
