janet's zucchini bread

This is my grandmother's recipe. Even my husband, who can't stand vegetables adores this bread. It's extremely moist and tastes wonderful grilled on a griddle.

Ingredients
- 3 - eggs
- 1 cup oil
- 2 cups sugar
- 1 tablespoon vanilla extract
- 1 teaspoon salt
- 3 cups flour
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- 1 1/2 cups raisins
- 3 cups raw shredded zucchini
How To Make janet's zucchini bread

Step 1Mix all ingredients together with the exception of the Zucchini. Add zucchini once everything else is incorporated completely otherwise it will release too much juice.

Step 2Pour batter into two greased loaf pans.

Step 3Bake at 350 for one hour.
