Irish Soda Bread and Guinness Butter

How to Make Irish Soda Bread and Guinness Butter
- Preheat oven to 350F. Grease 1 9 inch round pan. In mixer bowl combine flour, caraway, raisins, cubed butter, sugar, baking powder, salt, baking soda.
- In measuring cup with buttermilk add one egg and beat. in a separate bowl take remaining egg and a bit of water and beat - reserve this to brush dough with just prior to placing in the oven.
- With mixer on low speed add buttermilk and egg mixture. Mix until just blended do not over mix. Place dough on floured surface add a bit more flour to top of dough ball and knead for about 10 strokes to make a ball. Place in greased pan.
- Baste with egg wash then cut a cross on the top with a sharp knife. Bake for 1 1/2 hours. Allow to cool and wrap in plastic wrap this goes stale quickly. A great addition to the final product is Guinness Butter...2 sticks of room temp butter 3 oz of Guinness 3 tablespoons honey beat in mixer. Served on this bread is very yummy!
