When my daughter was growing up, we both enjoyed having banana bread for breakfast. This apple bread recipe resulted from one of my happy experiments with variations on a theme. Served warm and topped with whipped cream, it also makes a nice dessert.

Ingredients

  • 1/2 c
    butter
  • 2/3 c
    white sugar
  • 1/3 c
    brown sugar
  • 2
    eggs
  • 1 c
    unsweetened applesauce
  • 2 c
    all-purpose flour
  • 1 tsp
    baking soda
  • 3 Tbsp
    milk
  • 1 tsp
    vanilla extract
  • 1 tsp
    cinnamon
  • 1
    peeled and diced granny smith apple

How to Make Happy Apple Bread

Step-by-Step

  1. Preheat oven to 350ยบ F.
  2. Cream together butter and sugar.
  3. Add eggs and applesauce. Mix, using an electric mixer, until well blended.
  4. Add flour, milk, baking soda, vanilla, and cinnamon. Blend thoroughly, but do not over-mix.
  5. Fold in diced apple.
  6. Pour batter into two greased and floured loaf pans (8 1/2 " X 4 1/2" X 2")7.
  7. Bake for 45 minutes.
  8. Remove baked loaves from pans to cool.
