My mom shared this lovely recipe with me. It's certainly a keeper. Makes two moist, delicious loaves! Enjoy!

Ingredients

  • 1-8 ounce softened cream cheese
  • 3/4 cup softened unsalted butter
  • 2 cups sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 medium ripe bananas, smashed
  • 3 cups flour
  • 1/2 teaspoon each - baking powder, baking soda, salt and cinnamon
  • 2 cups chopped pecans or walnuts
  • GLAZE
  • 3 tablespoons orange juice, fresh
  • 1 cup confectioners' sugar
  • 1 teaspoon orange zest

How To Make ~ banana born & bred ~

  • Step 1
    Preheat oven to 350 degree F. Spray two 8 Inch x 4 Inch loaf pans with bakers secret or grease and flour. Set aside. In a large bowl, cream together the cream cheese, sugar and butter, until fluffy. Add eggs one at a time, beating well after each addition. Add bananas and vanilla and thoroughly beat.
  • Step 2
    In a med bowl, toss together flour, baking soda, salt, cinnamon and baking powder. Add a little at a time to the wet mixture. Stir in 1 cup of nuts.
  • Step 3
    Measure batter evenly into the bread pans. Sprinkle the tops with remaining nuts.
  • Step 4
    Bake for 1 hour and 10 - 15 minutes or until pick inserted in center comes out clean. Mix glaze ingredients, making sure of no lumps.
  • Step 5
    After about 10 minutes remove loaves from pans and sit upright on cooling rack. Pour glaze evenly over top of bread while lukewarm.
  • Step 6
    Cool, cut and enjoy!
