My dear beloved Granny Clara made this bread every year for Christmas until she passed away. She would make each of us a loaf, and we would not share :)I still make it every Christmas and cherish the memories dearly. Passed down from Great Great Grandma Harriet Jane Bettis to Great Grandma Clara Reasner Lyles to Grandma Clara Olive Dasher Owens-Crain to Grand daughter Pattie Owens-Berriman.

Ingredients

  • 2 cups all purpose flour
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons baking soda
  • 1 cup sugar
  • 1 - egg, slightly beaten
  • 3 tablespoons vegetable oil
  • 3/4 cup orange juice or juice of 1 orange + water to = 3/4c
  • 1/2 cup chopped walnuts
  • 1-2 cup cranberries cut into halves
  • - zest of 1 orange

How To Make granny clara's cranberry bread

  • Step 1
    Instructions: Preheat oven to 350 degrees.
  • Step 2
    Sift flour with dry ingredients; add beaten eggs, oil and orange juice. Combine only until dry ingredients are moistened. Fold in nuts, cranberries and orange rind.
  • Step 3
    Turn into greased 1lb.loaf pan or 2 one half pound pans. Bake 1 lb. pan 1 hour and 1/2 lb. 45 minutes or until done. Wait 24 hours or longer to cut.
  • Step 4
    Cool slightly in the baking pan and then turn out onto a wooden or wire rack and finish cooling. Brush lightly with melted butter and sprinkle with coarse sugar. Wrap in wax paper tighlty then wrap with foil..let set for @ least 24hrs..in order for the flavors to fully develope
