grandma's zucchini bread
This is a family recipe that was taught to us by Grandma Betty. We always shredded the zucchini in the late summer and would freeze it for making this at Christmas time for the family. Grandma would make sure each family would get a loaf. I now carry that tradition by giving as Christmas presents to family and friends.

Makes about 4 loafs of bread
Ingredients
- WET MIX
- 4 1/2 cups sugar
- 2 cups oil
- 4 cups zucchini
- 2 tablespoons vanilla extract
- 6 large eggs
- DRY MIX
- 2 cups walnuts (optional)
- 6 cups all purpose flour
- 2 teaspoons salt
- 2 teaspoons baking soda
- 2 1/2 teaspoons baking powder
- 2 teaspoons nutmeg
- 2 tablespoons cinnamon
How To Make grandma's zucchini bread

Step 1Preheat oven to 350 Grease and flour glass loaf pans (3-4 pans)

Step 2Mix Oil , Sugar , Zucchini and vanilla together.

Step 3Beat Eggs well and then add to oil , sugar mix .

Step 4Mix and then sift dry ingredients together. Slowly add dry mix to wet mix. Mix until no lumps remain .

Step 5Fill glass loaf pans (greased and floured) to about 2/3 full.

Step 6Bake at 350 for 1 hour or until centers are done. I usually insert a butter knife and if it comes out clean , it's done. Let cool in pans.
