This is Grandma Hazel's recipe for carrot bread. I got a blue ribbon for it when I entered it in the county fair when I was in 4H about 40 years ago. It is still a family favorite.

Ingredients
- 3 - eggs, beaten
- 1 1/2 cups oil (or use 3/4 cup each oil and applesauce)
- 2 cups sugar
- 2 cups grated carrots
- 8 ounces crushed pineapple in juice, undrained
- 3 teaspoons vanilla extract
- 3 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 1 cup chopped walnuts
How To Make grandma hazel's carrot bread

Step 1Mix all ingredients together until moistened.

Step 2Pour batter into 2 greased and floured 9 x 5-inch loaf pans. Bake at 325 degrees for one hour, turn off oven and leave in oven with door closed for an additional 10 minutes.

Step 3Remove from pans and cool on wire racks. Makes 2 loaves.

Step 4NOTES: You can also fill 9 baby loaf pans and bake for 40 minutes. Makes great Christmas gifts.
