Grandma Hazel's Carrot Bread

Ingredients

3eggs, beaten

1 1/2 coil (or use 3/4 cup each oil and applesauce)

2 csugar
-
2 cgrated carrots
-
8 ozcrushed pineapple in juice, undrained

3 tspvanilla extract
-
3 cflour
-
1 tspbaking soda
-
1 tspsalt
-
2 tspcinnamon
-
1 cchopped walnuts
How to Make Grandma Hazel's Carrot Bread
- Mix all ingredients together until moistened.
- Pour batter into 2 greased and floured 9 x 5-inch loaf pans. Bake at 325 degrees for one hour, turn off oven and leave in oven with door closed for an additional 10 minutes.
- Remove from pans and cool on wire racks. Makes 2 loaves.
- NOTES: You can also fill 9 baby loaf pans and bake for 40 minutes. Makes great Christmas gifts.
