My youngest grandson, Johnny, came home from school with this recipe from his 2nd grade class teacher. He was told to make it with someone for Thanksgiving...he chose me, his Grammy. This was several years ago. Needless to say...it has become a tradition, one that I hope will go on for a very long time.

Ingredients

  • 2 cups sifted all purpose flour
  • 1 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 cup butter
  • 1 - egg, beaten
  • 1 teaspoon grated orange peel
  • 3/4 cup orange juice (i used orange juice concentrate...1/2 cup of the frozen concentrate then added 1/4 cup of water to make 3/4 of a cup)
  • 1 1/2 cups raisins...light or dark (we use dark)
  • 1 1/2 cups fresh or frozen cranberries, chopped (we use fresh)

  • Step 1
    Preheat oven to 350 degrees. Grease 9 x 5 x 3 inch loaf pan.
  • Step 2
    Sift flour, sugar, baking powder, salt, and baking soda into a large bowl. Cut in butter until mixture is crumbly. Add egg, orange peel, and orange juice all at once; stir just until mixture is evenly moist. Fold in raisins and cranberries.
  • Step 3
    Spoon into loaf pan. Bake for 1 hour and 10 minutes, or until a toothpick inserted comes out clean. Remove from pan; cool on a wire rack.
