good for you zucchini and apple bread
I love zucchini bread, but I hate all the oil and sugar you have to put in it. I developed this recipe so it is better for you, and it is still sweet and moist. My kids love this recipe. I make one loaf and mini muffins for them. It is really good with pineapple or orange jam. I know you guys will love it too.

Enjoy this better-for-you zucchini and apple bread for breakfast, a light dessert, or an afternoon snack. The quick bread is dense but super moist from the shredded apples and zucchini. Cinnamon adds a warm flavor to the bread, while pecans add a crunch that we enjoyed. The recipe makes two loaves of bread. Enjoy one now and freeze the second for later... or share with friends. If you want, vegetable oil can be swapped with avocado oil, and granulated sugar can be swapped with an unrefined sugar to cut back on processed ingredients.
Ingredients
- 1 medium zucchini
- 1 large apple, Golden Delicious or Gala
- 1 1/2 cups applesauce, unsweetened
- 2 large eggs
- 1/4 cup vegetable oil
- 2 tablespoons pure vanilla extract
- 1/4 cup honey
- 1 1/2 cups granulated sugar
- 1 cup chopped pecans or walnuts
- 3 cups white whole wheat flour or whole wheat
- 1 teaspoon salt
- 1 1/2 tablespoons ground cinnamon
- 1 teaspoon baking powder
- 1 teaspoon baking soda
How To Make good for you zucchini and apple bread

Step 1Preheat the oven to 325 degrees F. Grease and flour two loaf pans.

Step 2Start shredding the zucchini and apple. Don't drain the zucchini; set aside.

Step 3Mix in applesauce, eggs, oil, vanilla extract, honey, and sugar. Set mixture aside.

Step 4Sift whole wheat flour with salt, cinnamon, baking powder, and baking soda.

Step 5Fold into the zucchini mixture with a wooden spoon or mixer until well combined.

Step 6Divide batter into 2 loaf pans.

Step 7Bake for 50 - 60 minutes until a toothpick comes out clean. My oven takes about 50 minutes, but every oven is different.

Step 8Take it out of the oven and let it cool in the pan for 10 minutes. Take them out of the pan and let the loaves cool on a wire rack or cutting board for 20 minutes. Start slicing and enjoy with butter or jam if desired, or just by itself is really good.
