Ingredients
- 6 - ripe bananas, mashed
- 1/2 cup chopped nuts (or more, to taste)
- 1/2 cup sugar (or splenda)
- 1 1/2 teaspoons baking powder
- 2 teaspoons vanilla
- 1 teaspoon baking soda
- 4 - eggs
- 1/2 teaspoon salt
- 2 1/2 cups brown rice flour
- 1/2 cup oil
How To Make gluten-free banana bread

Step 1Grease pans and preheat oven 350.

Step 2In a medium bowl combine mashed bananas, sugar, oil, vanilla and eggs; mix for 1 minute.

Step 3In a seperate bowl combine flour, nuts and all dry ingredients. Stir into banana mixture mixing well.

Step 4Bake for 30-35 minutes; start checking for doneness with a toothpick. Loaf pans take a little longer. Makes 4 loaf pans. (I've even broken it into 2 loaf pans and a 9x9 dish -- the dish was not as thick and I pulled it out sooner than the loaf pans.)
