After trial and error -- the bread is not dry at all with the 6 bananas. Dryness is an issue when using rice flour in recipes.

Ingredients

  • 6
    ripe bananas, mashed
  • 1/2 c
    chopped nuts (or more, to taste)
  • 1/2 c
    sugar (or splenda)
  • 1 1/2 tsp
    baking powder
  • 2 tsp
    vanilla
  • 1 tsp
    baking soda
  • 4
    eggs
  • 1/2 tsp
    salt
  • 2 1/2 c
    brown rice flour
  • 1/2 c
    oil

How to Make Gluten-Free Banana Bread

Step-by-Step

  1. Grease pans and preheat oven 350.
  2. In a medium bowl combine mashed bananas, sugar, oil, vanilla and eggs; mix for 1 minute.
  3. In a seperate bowl combine flour, nuts and all dry ingredients. Stir into banana mixture mixing well.
  4. Bake for 30-35 minutes; start checking for doneness with a toothpick. Loaf pans take a little longer.
    Makes 4 loaf pans. (I've even broken it into 2 loaf pans and a 9x9 dish -- the dish was not as thick and I pulled it out sooner than the loaf pans.)
