How to Make Gluten-Free Banana Bread
- Grease pans and preheat oven 350.
- In a medium bowl combine mashed bananas, sugar, oil, vanilla and eggs; mix for 1 minute.
- In a seperate bowl combine flour, nuts and all dry ingredients. Stir into banana mixture mixing well.
- Bake for 30-35 minutes; start checking for doneness with a toothpick. Loaf pans take a little longer.
Makes 4 loaf pans. (I've even broken it into 2 loaf pans and a 9x9 dish -- the dish was not as thick and I pulled it out sooner than the loaf pans.)
