I am always looking for different recipes to use as gifts during the Christmas season for those individuals who have everything. This is a perfect gift for neighbors, co-workers, friends, church, etc. Just bake them in disposable pans and tie a pretty ribbon around them and you have a perfect gift!

Ingredients
- 3 cups flour
- 2 teaspoons baking soda
- 1 teaspoon cinnamon
- 1 teaspoon ginger
- 1/2 teaspoon salt
- 3 - eggs
- 1 1/2 cups sugar
- 3/4 cup hellman's real mayonnaise
- 20 ounces an crushed pineapple; drain and reserve 1/2 c. juice
- 3 cups coarsely shredded carrots
- 1 cup raisins
- 1 cup coarsely chopped walnuts

Step 1Grease and flour 6 (5 1/2 x 3 x 2 1/2") loaf pans or 2 (9 x 5 x 3") loaf pans or 1 (9 x 13") baking pan. Mix first five ingredients. In large bowl with mixer on medium speed, beat eggs, sugar, mayonnaise, crushed pineapple and 1/2 cup juice until well blended. Gradually beat in flour mixture until well mixed. Stir in remaining ingredients.

Step 2Turn into prepared pans. Bake at 350 degrees for 50 - 55 minutes or until tester inserted in center comes out clean. Cool in pans for 10 minutes. Remove. Cool.

Step 3Frost with Silky Lemon Frosting: In small bowl with mixer at low speed, beat one 8 oz. package cream cheese until softened and 1/2 c. margarine until smooth. Beat in 1 tablespoon lemon juice and 1 teaspoon grated lemon rind. Gradually beat in 1 1/2 cups unsifted powdered sugar until light and fluffy. If you use (5 1/2 x 3 x 2 1/2") pans, check for doneness at 30 minutes. I am not sure of the reason for Hellman's Real Mayonnaise but I tend to follow directions as stated and not deviate. I only buy Hellman's mayonnaise anyway so was glad to see it used it. It seems time consuming but it isn't that difficult. ENJOY!
