I am always looking for creative ways to use the fresh vegetables as they come out of the garden. This chocolate bread is always a hit and no one ever guesses that there is zucchini in it.

Ingredients
- DRY INGREDIENTS
- 2 1/2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 4 tablespoons ghirardelli chocolate unsweetened cocoa
- CREAMED INGREDIENTS
- 1 1/4 cups sugar
- 1/2 cup softened margarine
- 1/2 cup canola oil
- 1 teaspoon vanilla
- 2 - eggs
- ADD
- 1/2 cup buttermilk
- 1 cup pecans, chopped
- 3/4 cup mini semi-sweet chocolate chips
- 2 cups grated zucchini
How To Make ghirardelli chocolate zucchini nut bread

Step 1Mix all dry ingredients together in bowl.

Step 2In separate bowl, cream sugar, margarine, oil, vanilla and eggs. Add dry ingredients.

Step 3Mix in buttermilk, pecans, chocolate chips and zucchini.

Step 4Pour into two greased and floured loaf pans. Cook at 325 degrees for approximately 50-60 minutes until toothpick comes out smooth. Remove from pans. Cool and slice.
