How To Make frosted banana oat bread

  • 1
Preheat oven to 350F. Grease or spray a loaf pan, set aside. Make sure eggs are at room temperature. If not, place them in warm water for 5-8 minutes.
  • 2
In a large bowl, mash the bananas. Whisk in the sugars, milk, oil, eggs, applesauce and vanilla.
  • 3
In a separate bowl, mix together the flour, oats, baking powder, baking soda, salt and cinnamon.
  • 4
Add the dry ingredients to the wet ingredients. Combine using a rubber spatula. Mix until no flour pockets can be seen, but don't overmix.
  • 5
Scrape the batter into the prepared pan. Bake for 70 minutes, until a toothpick inserted into the middle comes out with a few crumbs. Remove from oven and let cool for 10 minutes.
  • 6
Run a knife around the edges of the pan to gently separate the loaf. Turn out onto a rack. Flip over, right side up. Cool completely before icing.
  • 7
Make the Icing: WHEN THE CAKE IS FULLY COOLED... Bring the brown sugar, milk, and butter to a boil in a small saucepan, whisking continually. Remove from heat. Stir in the powdered sugar until no lumps remain. Let cool for about 4 minutes, stirring occasionally. It will thicken quickly.
  • 8
Pour the icing evenly over the top of the cake, working quickly because it will set real fast. Avoid layering the icing. Allow to set for 15 minutes before slicing.
