Ingredients
- 3 - very ripe bananas, mashed
- 1/2 cup sugar
- 1/4 cup light brown sugar, packed
- 1/2 cup oat milk (or regular milk)
- 1/3 cup vegetable oil
- 2 large eggs, room temp
- 1/4 cup unsweetened apple sauce
- 1 teaspoon vanilla
- 2 cups all-purpose flour
- 1/2 cup quick oats
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 teaspoons cinnamon
- ICING:
- 3/4 cup light brown sugar, packed
- 6 tablespoons oat milk (or regular)
- 3 tablespoons butter
- 2 cups powdered sugar
How To Make frosted banana oat bread

Step 1Preheat oven to 350F. Grease or spray a loaf pan, set aside. Make sure eggs are at room temperature. If not, place them in warm water for 5-8 minutes.

Step 2In a large bowl, mash the bananas. Whisk in the sugars, milk, oil, eggs, applesauce and vanilla.

Step 3In a separate bowl, mix together the flour, oats, baking powder, baking soda, salt and cinnamon.

Step 4Add the dry ingredients to the wet ingredients. Combine using a rubber spatula. Mix until no flour pockets can be seen, but don't overmix.

Step 5Scrape the batter into the prepared pan. Bake for 70 minutes, until a toothpick inserted into the middle comes out with a few crumbs. Remove from oven and let cool for 10 minutes.

Step 6Run a knife around the edges of the pan to gently separate the loaf. Turn out onto a rack. Flip over, right side up. Cool completely before icing.

Step 7Make the Icing: WHEN THE CAKE IS FULLY COOLED... Bring the brown sugar, milk, and butter to a boil in a small saucepan, whisking continually. Remove from heat. Stir in the powdered sugar until no lumps remain. Let cool for about 4 minutes, stirring occasionally. It will thicken quickly.

Step 8Pour the icing evenly over the top of the cake, working quickly because it will set real fast. Avoid layering the icing. Allow to set for 15 minutes before slicing.
