These French Toast Roll-ups are wonderful to make ahead for holiday company. They can be kept frozen for two months. I've experimented with this basic recipe by using flavored cream cheese as pumpkin and rolled them in pumpkin pie spice instead of plain cinnamon. Add nuts, blueberries, strawberries for variety.

Ingredients
- 8 ounces softened cream cheese
- 1 - egg yolk
- 1 cup white sugar
- 20 slices white sandwich bread
- 1 tablespoon ground cinnamon
- 3 tablespoons melted butter
How To Make french toast roll-ups

Step 1In a medium bowl, beat cream cheese, egg yolk, and 1/4 cup of sugar until smooth; set aside.

Step 2Remove crusts from white bread; roll each slice with a rolling pin.

Step 3Spread cream cheese mixture on white bread; roll up jelly roll style and place seam side down on a baking sheet.

Step 4In a shallow dish, combine remaining sugar and cinnamon.

Step 5Brush melted butter over roll-ups; then roll them in cinnamon-sugar mixture.

Step 6Return roll-ups to baking sheet; cover and freeze for at least two hours. Bake at 400 degrees for 10-12 minutes.
