These French Toast Roll-ups are wonderful to make ahead for holiday company. They can be kept frozen for two months. I've experimented with this basic recipe by using flavored cream cheese as pumpkin and rolled them in pumpkin pie spice instead of plain cinnamon. Add nuts, blueberries, strawberries for variety.

  • 8 oz
    softened cream cheese
  • 1
    egg yolk
  • 1 c
    white sugar
  • 20 slice
    white sandwich bread
  • 1 Tbsp
    ground cinnamon
  • 3 Tbsp
    melted butter

How To Make french toast roll-ups

    In a medium bowl, beat cream cheese, egg yolk, and 1/4 cup of sugar until smooth; set aside.

    Remove crusts from white bread; roll each slice with a rolling pin.

    Spread cream cheese mixture on white bread; roll up jelly roll style and place seam side down on a baking sheet.

    In a shallow dish, combine remaining sugar and cinnamon.

    Brush melted butter over roll-ups; then roll them in cinnamon-sugar mixture.

    Return roll-ups to baking sheet; cover and freeze for at least two hours. Bake at 400 degrees for 10-12 minutes.
