apples, oranges, pineapple, figs or pears
1Sprinkle fruit slices of your choice with the lemon rind and sugar and let stand for 2 to 3 hours.
2Drain and dip in the thin fritter batter.
3Batter: Beat together with mixer, egg yolks, milk, flour, salt butter and lemon juice, (May add 2 tablespoons sugar and dash of nutmeg.)
4Fold in the stiffly beaten egg whites.
5Fry in deep fat 375 degrees.
6Drain and serve hot with confectioner's sugar, or a sweet syrup or sauce.
