Ingredients

  • 2 - eggs, separated
  • 2/3 cup milk
  • 1 cup sifted flour
  • 1/2 teaspoon salt
  • 1 tablespoon butter, melted
  • 2 tablespoons lemon juice
  • 1 - grated lemon rind
  • 2 tablespoons sugar
  • 4 - apples, oranges, pineapple, figs or pears

How To Make french fritters

  • Step 1
    Sprinkle fruit slices of your choice with the lemon rind and sugar and let stand for 2 to 3 hours.
  • Step 2
    Drain and dip in the thin fritter batter.
  • Step 3
    Batter: Beat together with mixer, egg yolks, milk, flour, salt butter and lemon juice, (May add 2 tablespoons sugar and dash of nutmeg.)
  • Step 4
    Fold in the stiffly beaten egg whites.
  • Step 5
    Fry in deep fat 375 degrees.
  • Step 6
    Drain and serve hot with confectioner\'s sugar, or a sweet syrup or sauce.
