Ingredients
- 2 - eggs, separated
- 2/3 cup milk
- 1 cup sifted flour
- 1/2 teaspoon salt
- 1 tablespoon butter, melted
- 2 tablespoons lemon juice
- 1 - grated lemon rind
- 2 tablespoons sugar
- 4 - apples, oranges, pineapple, figs or pears
How To Make french fritters

Step 1Sprinkle fruit slices of your choice with the lemon rind and sugar and let stand for 2 to 3 hours.

Step 2Drain and dip in the thin fritter batter.

Step 3Batter: Beat together with mixer, egg yolks, milk, flour, salt butter and lemon juice, (May add 2 tablespoons sugar and dash of nutmeg.)

Step 4Fold in the stiffly beaten egg whites.

Step 5Fry in deep fat 375 degrees.

Step 6Drain and serve hot with confectioner\'s sugar, or a sweet syrup or sauce.
