Fantastic Zucchini Bread

This is the best zucchini recipe that I have ever eaten. It is moist with a fantastic flavor. I took the picture of warm zucchini bread with 2 slices taken off because my husband and I couldn't wait for it to cool! It is the best way to use up those zucchinis.

  • 3/4 c
  • 1 3/4 c
  • 2 tsp
    vanilla extract
  • 1 tsp
    baking soda
  • 1 tsp
    baking powder
  • 1 c
    crushed pineapple (drained)
  • 3 large
  • 2 c
    grated zucchini
  • 3 c
    all purpose flour
  • 1 tsp
  • 1/2 c
    marachino cherries (chopped)

How to Make Fantastic Zucchini Bread


  1. Cream sugar and eggs, add oil, mix well then add vanilla.
  2. Sift dry ingredients, add to egg mixture a little at a time.
  3. Stir in zucchini, pineapple, and cherries. Mix well.
  4. Bake in 2 greased and floured 9x5x4" bread pans at 325* for 55 minutes. (Time may vary oven to oven so just bake them till nicely browned)
