fantastic zucchini bread

This is the best zucchini recipe that I have ever eaten. It is moist with a fantastic flavor. I took the picture of warm zucchini bread with 2 slices taken off because my husband and I couldn't wait for it to cool! It is the best way to use up those zucchinis.

Ingredients

  • 3/4 cup oil
  • 1 3/4 cups sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup crushed pineapple (drained)
  • 3 large eggs
  • 2 cups grated zucchini
  • 3 cups all purpose flour
  • 1 teaspoon salt
  • 1/2 cup marachino cherries (chopped)

How To Make fantastic zucchini bread

  • Step 1
    Cream sugar and eggs, add oil, mix well then add vanilla.
  • Step 2
    Sift dry ingredients, add to egg mixture a little at a time.
  • Step 3
    Stir in zucchini, pineapple, and cherries. Mix well.
  • Step 4
    Bake in 2 greased and floured 9x5x4" bread pans at 325* for 55 minutes. (Time may vary oven to oven so just bake them till nicely browned)
