fantastic zucchini bread
This is the best zucchini recipe that I have ever eaten. It is moist with a fantastic flavor. I took the picture of warm zucchini bread with 2 slices taken off because my husband and I couldn't wait for it to cool! It is the best way to use up those zucchinis.

Ingredients
- 3/4 cup oil
- 1 3/4 cups sugar
- 2 teaspoons vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 cup crushed pineapple (drained)
- 3 large eggs
- 2 cups grated zucchini
- 3 cups all purpose flour
- 1 teaspoon salt
- 1/2 cup marachino cherries (chopped)
How To Make fantastic zucchini bread

Step 1Cream sugar and eggs, add oil, mix well then add vanilla.

Step 2Sift dry ingredients, add to egg mixture a little at a time.

Step 3Stir in zucchini, pineapple, and cherries. Mix well.

Step 4Bake in 2 greased and floured 9x5x4" bread pans at 325* for 55 minutes. (Time may vary oven to oven so just bake them till nicely browned)
