I thought I had the best pumpkin bread recipe until my Mom made hers. No contest, hers was the best. I have used her recipe since then. This Pumpkin Bread is super moist and does not last long!!

Ingredients
- 1 cup sugar
- 1/2 cup brown sugar, firmly packed
- 1/2 cup vegetable oil
- 1 cup canned pumpkin
- 2 - eggs
- 2 cups all purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 teaspoon baking soda
- 1/2 teaspoon nutmeg
- 1/4 cup water
- OPTIONAL:
- 1 cup raisins
- 1/2 cup nuts

Step 1Preheat oven to 350. Generously coat a 9X5X3 loaf pan with oil or shortening.

Step 2Combine sugars, pumpkin, oil and eggs in a large bowl and mix until well-blended.

Step 3Add dry ingredients to this mixture and mix again until well-blended. Stir in water and mix again to blend well. Pour into prepared loaf pan

Step 4Bake at 350 for 65 to 75 minutes or until cake tester inserted in center comes out clean. Cool in pan for 10 minutes, then turn out on rack to cool completely.
